Recent addition to the Dogfish Family and Delaware, I spent the last 4 years of life opening restaurants for the Village Tavern LLC. Finding home in Delaware with wife and son, I enjoy working with farmers on a weekly basis to bring the freshest local ingredients to our customers and finding the root of local cuisine in the farms to bring to the table. Getting to handle produce and vegetables that were picked that morning and put on our table at night brings a level of freshness and quality that is not had at most establishments. Also working with farms to bring our own pigs and bovine in allows us to have a say in how our proteins are raised with good structure and quality of life very important. Before finding home with the Dogfish family, I have spent time with Phillips foods, Bo Brooks restaurant, and went to college in Providence, RI.
